BALSAMIC STRAWBERRY PRESERVE AND CREAMY YOGURT CHEESE CROSTINI
Makes 1 1/2 cups yogurt cheese
Makes 2 cups balsamic strawberries
Need a tried-n-true appetizer recipe that’s sure to wow your guests? Try our tangy meets sweet and creamy meets crisp crostini. Everything can be prepared ahead and assembled quickly right before your party. Pair with Prosecco or your favorite sparkling wine for a festive and memorable hors d’oeuvre. We make our own “cream cheese” with lactose-free yogurt for a homemade lactose-free cheese that’s a great alterative to regular cream cheese.
- 4 (8 oz.) containers Green Valley Organics Lactose Free Plain Yogurt
- 1 tsp. salt
- 2 Tbs. vegetable oil
- 1/3 cup finely minced onion, yellow or red
- 1 lb. strawberries, fresh or frozen
- 1/4 cup sugar
- 4 sprigs fresh thyme, plus more for garnish
- 3 Tbs. good quality balsamic vinegar
- 1 large baguette, cut into 1/4-inch thick slices
- 1/4 cup olive oil
Empty yogurt into a large mesh strainer lined with a double layer of cheesecloth, paper towels or a coffee filter. Stir in salt.
Place strainer over a bowl, cover with plastic wrap and refrigerate overnight (8 hours).
Place cheese in a small bowl, discard whey, cover and chill until ready to use.
If using fresh strawberries, remove the tops and halve the berries.
In a large saucepan, heat oil over medium heat. Add onions and cook 8 to 10 minutes, until very soft.
Stir in strawberries, sugar and thyme; cover and cook 10 to 15 minutes, stirring occasionally.
When the strawberries cook down into a “jam-like” consistency, add the vinegar and remove the thyme sprigs. Cook 3 to 4 minutes longer.
If desired, add about 1/3 cup fresh chopped strawberries for texture. Adjust seasonings and add salt to taste.
Preheat oven to 400°F. Arrange sliced baguette on a baking sheet, drizzle with olive oil and bake 6 to 8 minutes, until golden and crisp.
When the crostini cool, top with yogurt cheese and a dollop of balsamic strawberries. Garnish with fresh thyme.
EZ TIP: Switch out the strawberries and create your own flavor combination. We love fresh or frozen peaches simmered with apricots, figs, honey, cinnamon and walnuts.
EZ TIP: Make buttery gluten-free bread crisps by brushing melted Earth Balance over sliced gluten-free bread, cut into quarters and toast in a 400°F for 5 to 7 minutes, until just golden.
EZ TIP: Make your own herbed fresh cheese by folding in fresh garlic and a mixture of chopped rosemary, thyme, basil and lemon zest into the drained yogurt cheese.
EZ TIP: Serve balsamic strawberry preserve to add festive flair to a holiday pork loin roast or pork crown roast. It also makes a great glaze for pork roast, chops or ham.
