BUTTERNUT SQUASH WITH SOUR CREAM

We love this simple and innovative way to serve butternut squash! The texture of the crunchy onions and the cubed squash is delicious. To make it even quicker, look for butternut squash that’s been already peeled and cubed at the market. Our thanks to Carol Wysopal for sharing this family recipe.

 

Ingredients:

  • 1 medium butternut squash, peeled, seeded, and cut into cubes
  • 1 medium sweet onion
  • 8 oz. Green Valley Organics Lactose Free sour cream

Directions:

 

Place cubed butternut squash in a microwave-safe bowl covered with waxed paper. Cook for 8 minutes on High.

Peel and cut a Vidalia or other sweet onion into large chunks. Saute in 1 Tbs vegetable oil until translucent but still crunchy. Remove from heat. Mix sour cream with onions in pan.
Stir in the cubed squash and mix together with onions and sour cream. Serve immediately.
