CARROT & CELERY SLAW WITH YOGURT DRESSING

We love this fresh, easy and delicious recipe made with Green Valley Organics® Lactose Free Yogurt. A healthful, low-fat and fiber rich side dish with a creamy, satisfying taste. Recipe originally published at RealSimple.com, adapted by Sharon Bice.

Ingredients:

  • 1⁄4 cup plain Green Valley Organics Lactose Free plain yogurt
  • 2 Tbsp. olive oil
  • 2 tsp. Dijon mustard
  • 1 clove garlic, minced
  • 1⁄2 tsp. kosher salt
  • 6 carrots, shredded (2 cups)
  • 2 celery stalks, thinly sliced (1 cup)
  • 1 Tbsp. fresh chives, chopped

Directions:

In a large bowl, whisk together the yogurt, olive oil, mustard, garlic and salt.

Add the carrots, celery and chives and toss.
