EDAMAME HUMMUS

Ingredients:

  • 2 cups edamame, cooked and cooled
  • 1 Tbsp. smoked paprika
  • 3 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 3 Tbsp. lime juice
  • ¼ cup Green Valley Lactose Free Plain Yogurt
  • ½ tsp.  freshly ground white pepper
  • ½ tsp. sea salt
  • ½ tsp. cumin
  • 1/4 tsp. ground coriander
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped

Directions:

In a food processor, pulse edamame, garlic, lime juice, Green Valley Lactose Free Yogurt, olive oil, pepper, sea salt, cumin, coriander, parsley and cilantro in a food processor until mixture is thick and creamy.  Transfer mixture to a serving dish.  Place into the refrigerator, covered, until ready to serve. 

Serves 4.
