DELICIOUS BISCUITS


- Recipe courtesy of Barbara Hancock, a new-comer to kefir

2 cups all purpose flour (I use King Arthur)
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
8 Tbsp. (1 stick) cold unsalted butter, cut into pieces
¾ cup well-shaken Green Valley Organics Lactose Free Plain Kefir
1 Tbsp. Green Valley Organics Lactose Free Plain Kefir - for brushing


- Preheat oven to 425 degrees.  Lightly grease a baking sheet.
- In a bowl mix all dry ingredients together. 
- Blend in butter pieces with your fingertips or in a pastry blender until mixture resembles coarse meal.
- Add kefir and stir just until dough forms *.
- Gather dough into a ball and turn onto a lightly floured surface.  Pat or roll dough to a thickness of ½ inch.

- Cut out as many rounds as possible with lightly floured 2 inch cutter and place on greased baking sheet about 1 inch apart.  Gather scraps, pat down and make more rounds.
- Brush rounds with extra kefir and bake 12 to 15 minutes until they are pale golden.  Makes about twelve 2 inch biscuits.
