Gluten Free Oat and Lactose Free Yogurt Belgian Waffles

This may be my favorite way to really start the day of right with a nourishing breakfast made with my favorite Full-Fat Lactose Free Yogurt by Green Valley Organics. I honestly love creating a nourishing yogurt bowl during the weekdays, and on the weekends will make these Fluffy Gluten Free Oat and Yogurt Belgian Waffles. I then will spend some time reading and just enjoying the delicious food that I am fortunate to be able to nourish my body with.

Luckily for you I am sharing the recipe for these amazing waffles with you today and I promise that they are sure to quickly become a family favorite. The only rule when it comes to these waffles is that they should be enjoyed technology free, ideally with a nice book, and a homemade cappuccino.

1 tsp baking soda

2 tsp baking powder

2 cups gluten free oat flour

½ teaspoon Salt

2 Eggs

2/3 cups nondairy milk

1 cup Green Valley Organics Full Fat Lactose Free Yogurt

1 teaspoon vanilla

Blueberry Sauce

2 cups frozen blueberries

1 tablespoon Honey

1 tablesooon corn starch

½ cup water

1 tablespoon lemon juice


1 cup chopped strawberries

½ pint fresh blueberries

Maple Syrup

  1. Combine baking soda, baking powder, gluten free oat flour, and salt into a large mixing bowl.
  2. Whisk dry ingredients until well combined.
  3. Next, combine eggs, milk, yogurt, and vanilla is a medium size mixing bowl.
  4. Whisk wet ingredients together until well combined.
  5. Add wet ingredients into dry ingredients and whisk well until a smooth mixture forms.
  6. Heat your Belgian Waffle Maker and spray waffle trays with coconut oil.
  7. Add a large spoonful of the waffle batter to each square and the center of the Belgian waffle maker tray
  8. Cook for roughly 3 minutes and then remove from waffle maker
  9. Stack on a plate and top with homemade blueberry sauce, Green Valley Organics Lactose Free Butter, and fresh berries.
  10. Enjoy!

Blueberry Sauce

    1. Combine all blueberry sauce ingredients in a small saucepan on the stove over medium heat.
    2. Stir consistently for roughly 5 minutes or until the berries begin to soften and the mixture begins to thicken into the consistency of a sauce.
    3. Remove from heat and allow to cool slightly before pouring onto waffles.
    4. Store in a mason jar in the refrigerator for up to two weeks.
