Peach & Strawberry Hand Pies

As Summer leaves us and Fall creeps in, we wanted to celebrate our last favorite fruits of the season, dessert style. While walking through town, we were intrigued to see these flaky, buttery hand pies at a local bake shop. We purchased a few personal pies, and were immediately smitten by the hand-held twist on this comforting classic. Certainly, we knew our next step would be to create our own lactose-free version. While our butter is the star of this show, the strawberries and peaches were a perfect choice for this indulgent dessert.

Green Valley Organics
Ingredients

Filling

1/2 cup chopped peaches

1/2 cup chopped strawberries

3 tablespoons brown sugar

Pinch of salt

Crust:

1 1/2 cups all-purpose flour (or sub for gluten free)

1/4 block of Green Valley Organics lactose free butter

1 tablespoon sugar

1 teaspoon vinegar

1 tablespoons water

Instructions

Preheat oven to 375 degress F.

Filling:

  1. Chop ripe strawberries and peaches into small pieces.
  2. Combine fruit with brown sugar, put in fridge to chill. 

Crust:

  1. Combine flour, Green Valley Organics butter, sugar, and salt to a food processor, pulse until the dough is thick and mealy. 
  2. Add water and vinegar, pulse again until dough is moist yet not sticky. 

Pie Prep:

  1. Dust a surface with flour, then roll out dough until about 1/6th inch thick. 
  2. Use a dough cutter to cut out 4 rounds. Re-roll dough and repeat until you have 16 rounds (for 8 hand pies total.)
  3. Use a spoon to dollop filling onto 8 of the circles. Cover each pie with remaining circles, and press into the sides with a fork to seal pies. 
  4. Use a knife to poke holes into the top, or form small "X's" in order to let pie breathe. 
  5. Place pies on parchment paper and bake for 20 minutes.
