Lemon-Cream Layer Cake

Here’s a summer cake for those days when it’s just too hot to turn on the oven. Recruit the kids – building this “tower” is more fun than legos – and tasty too. The hardest part is waiting – it needs to sit overnight in the fridge for all the flavors to meld. The next day, the wafer cookies will be soft enough to slice, just like a cake. Instead of using the traditional whipped cream filling, we blended our lactose-free cream cheese and sour cream, then flavored it with lemon curd and fresh lemon juice.You’ll find this recipe, and lots of other great lactose-free recipes In The Kitchen.

Welcome Mazzetta Dairy

We just welcomed a second, local family farm to our small group of organic milk providers, the Mazzetta Dairy, which is located in the beautiful Petaluma valley in West Sonoma County. Ken and Nancy Mazzetta are second generation dairy farmers and pasture-raise their herd of 250 Holsteins and Holstein-Jersey cross breeds on 485 acres of rolling hills. That’s almost two acres of pasture per cow. Ample space and access to the outdoor among the fundamental standards of being Certified Humane® and Certified Organic, which of course, all of partner farms of Green Valley Creamery need to be.

Sonoma County has a long history of dairy farming, in fact, it was once considered the “milk shed” of the greater Bay Area. There is a long tradition of handcrafted, artisanal food in our area. We are delighted to continue on that path and to have all this additional organic milk to make into our yogurt, kefir, sour cream and cream cheese for you.
