Lactose Free-dom: How We Do It

To create our lactose free Green Valley Organics® yogurt, kefir, sour cream, and cream cheese, we add the enzyme lactase. People that are lactose intolerant do not produce this enzyme and therefore cannot digest the milk sugar, lactose, in dairy. When added to the milk the lactase breaks down the lactose into easily digested simple sugars (specifically, glucose and galactose). No chemicals are used, and the nutritional components of the milk are not altered in any way. What’s left? 100% farm-fresh dairy yogurt and kefir that's low-fat and contains probiotics. We love the taste of freedom in the morning, don’t you?
